COLD CUCUMBER MINT SOUP - NUTRIWELL INDIA

 

INGREDIENTS

  • Finely Chopped Cucumber 1½ in no.
  • Plain low fat Curd 1/4 cup
  • Chopped fresh mint leaves - 1/4 cup
  • Cucumber slices and mint sprigs for garnish
  • Salt & pepper to taste

 

DIRECTIONS

  • In a blender puree chopped cucumbers, yogurt, chopped fresh mint leaves and salt and pepper to taste and transfer to a bowl. Chill soup at least 6 hours
  • Stir in finely diced cucumber and chopped mint and garnish soup with cucumber slices and mint sprigs.
