2 carrot , chopped
Beet root( half cup), beans ( half cup)Onions (half cup) (optional) 1/2 cup cauliflower florets (if you have hypothyroidism plz avoid this) 1/2 cup chopped Ghia ( bottle guard) if you want you can add beans and beet root to the soup. 3 tomatoes , chopped 3 green chillies , chopped 2 garlic (lehsun) cloves , chopped 4 curry leaves (kadipatta) a pinch asafoetida (hing) 1/2 tsp cumin seeds (jeera) 1/2 tsp mustard seeds ( rai / sarson) Avoid oil. Try oil less cooking.
Combine the carrots, cauliflower, bottle guard, tomatoes , all vegetables and garlic in a pressure cooker, add enough water and pressure cook for one whistle.
Cool and blend in a mixer till smooth. Keep aside.
Heat pan and add the mustard seeds and cumin seeds.
When the seeds crackle, add the asafoetida and curry leaves and saute for 10 seconds.
Add the green chillies, blended vegetables, salt and mix well. Bring the soup to boil.
Simmer for few minutes. Serve hot.
